Howdy!
I recently posted a picture of my hash during my meal prep on Facebook and everyone seemed to love it and was curious about how I made it! I love when people get excited about my cooking So here is the recipe for a SUPER easy, and healthy hash that you can eat for ANY meal.
I use ground turkey in mine, but you could use any meat that you like. I heard Chorizo would be awesome in it! I think I will try that next time.
Sweet Potato Hash
Ingredients:
Hash Mixture:
- 3 peeled and cubed sweet potatoes
- 1 cubed apple
- Cinnamon, Paprika, Salt for seasoning
- 2 tbsp olive oil
Meat Mixture:
- 1 lb ground turkey
- 4 cups spinach- This will wilt down
- paprika, salt, pepper, garlic
- I also used Wildtree rancher steak rub but you can use whatever seasonings you like!
Directions:
In one pan, saute the sweet potato and apple in olive oil on medium high heat until soft. This takes about 20-30 minutes depending on how small you cube your sweet potato. Smaller cooks faster Season as much as you want!
Meanwhile, in a separate pan brown your ground turkey. When meat is almost cooked completed start adding your spinach. Keep folding in the spinach until it wilts down. I like to season my ground turkey A LOT because it can be pretty bland.
When both are completely cooked, mix them together and eat!
Top with fried eggs for even more deliciousness!
I can eat eggs on pretty much anything, how about you?
